GEOLOGICAL, PEDOLOGIC AND CLIMATIC CHARACTERISTICS
The Cavallotto Wine Company is situated in the commune of Castiglione
Falletto, the ground is prevalently of the Helvetian pedologic
underzone of the Barolo area and of the Tortonian underzone in
minimum part.
The subsoil of these hills, geologically marine sedimentary, originates
from the middle and Upper Miocene periods of the Tertiary Era
and is principally a compact and impermeable clay and calcium
carbonate marl of whitish and bluish hue.
Naturally within the limited confines of the above mentioned
sub-zone, the various types of subsoils aren't always distinct,
but, depending on the course of their formation, are often composites
of varying gradation, following telluric movements, cataclysms
and the action of time and atmospheric agents.
As a result, the burrowing root apparatuses of the grapevines
encounter strata of diverse physical and chemical nature. The
grapes produced are qualitatively sensitive to the assorted combinations
of pedological strata, giving rise to a distinctly unique yield
from each singular vineyard and thus rendering possible the production
of diverse Barolo wines within the confines of the same farm.
